  • 2 tablespoons melted butter For brushing the corn before grilling.

Creamy Cajun Mixture

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons Cajun seasoning Adjust based on spice tolerance.
  • 1 tablespoon lime juice Can substitute with lemon juice for a different citrus kick.
  • 1/4 cup freshly grated Parmesan cheese Experiment with different cheeses like feta or blue cheese.
  • 1 teaspoon smoked paprika
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Serving Garnish

  • 1 lime cut into wedges For serving with the corn.

Preparation

  • Preheat your grill to medium-high heat.
  • Husk and prepare the corn, removing any silk.
  • In a medium-sized bowl, combine the mayonnaise, sour cream, Cajun seasoning, lime juice, and a pinch of salt and pepper. Mix well until smooth and creamy, then set aside.
  • Brush the corn lightly with melted butter.

Grilling

  • Place the corn on the grill, turning occasionally, until the kernels are tender and slightly charred, about 15 minutes total.
  • Remove the corn from the grill and let it cool slightly for easier handling.

Serving

  • Generously brush the creamy Cajun mixture over each ear of corn.
  • Sprinkle the freshly grated Parmesan cheese evenly over the corn, followed by a dusting of smoked paprika.
  • Garnish with chopped parsley and serve the corn with lime wedges on the side for added zest.

Notes

If you have leftovers, wrap the corn tightly in plastic wrap or store it in an airtight container. It can be kept in the refrigerator for up to 2 days. Reheat the corn on the grill or in the microwave when ready to enjoy again.
