Spiced Apple Cider Donut Loaf

Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground allspice

Wet Ingredients

  • 0.5 cups unsalted butter, melted
  • 0.5 cups granulated sugar
  • 0.25 cups brown sugar
  • 2 large eggs
  • 0.5 cups apple cider
  • 1 tsp vanilla extract

Topping

  • 0.25 cups granulated sugar for cinnamon sugar topping
  • 1 tsp ground cinnamon for cinnamon sugar topping
  • 2 tbsp unsalted butter, melted for brushing on top

Instructions
 

Preparation

  • Preheat the oven to 175°C (350°F). Grease and flour a 23×13 cm (9×5 inch) loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice until well combined.
  • In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the apple cider and vanilla extract.
  • Gradually fold the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix to keep the loaf tender.

Baking

  • Pour the batter into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Topping

  • While the loaf is baking, combine the cinnamon and sugar in a small bowl. When the loaf is done, allow it to cool slightly in the pan.
  • Brush the top of the warm loaf with melted butter, then sprinkle generously with the cinnamon sugar mixture to create a crust.
  • Allow the loaf to cool for 10 minutes before removing it from the pan. Slice and serve warm.

Notes

Store the loaf in an airtight container at room temperature for up to 3 days. It can also be frozen for up to 2 months. Let thaw at room temperature before serving.
