Ingredients
  

For the filling

  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes) Ensure sweet potatoes are cooked until very tender.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs Beaten one at a time.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon Use fresh for best flavor.
  • 1/2 teaspoon ground nutmeg Use fresh for best flavor.
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup evaporated milk

For the crust

  • 1 9-inch pre-made pie crust Can be store-bought or homemade.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel the sweet potatoes and cut them into chunks. Place them in a pot of boiling water and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  • Mash the cooked sweet potatoes until smooth to yield about 2 cups.

Filling

  • In a large mixing bowl, add granulated sugar and brown sugar to the mashed sweet potatoes. Mix well until combined.
  • Incorporate the softened butter, blending until creamy.
  • Beat in the eggs, one at a time, ensuring each is well mixed before adding the next.
  • Stir in the vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and salt.
  • Gradually add the evaporated milk, mixing until the filling is smooth.
  • Pour the sweet potato filling into the pre-made pie crust, spreading it evenly.

Baking

  • Bake the pie in the preheated oven for about 55-60 minutes, or until the filling is set and the top is slightly golden.
  • Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing.

Notes

Serve with whipped cream or vanilla ice cream. For a firmer pie, bake it longer, monitoring the crust to prevent burning. Store tightly covered in the fridge or freezer for longer storage.
