Ingredients
  

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar

Wet Ingredients

  • 1 cup milk
  • 1/4 cup melted butter
  • 2 large eggs
  • 1/4 cup honey

Glaze

  • 1/4 cup additional melted butter for glaze
  • 1/4 cup honey for glaze

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  • In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  • In another bowl, combine the milk, melted butter, and eggs.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Scoop the batter into the mini muffin tin, filling each cup about 2/3 full.

Baking

  • Bake for 15-18 minutes or until golden brown.

Glazing

  • In a small bowl, combine the honey and melted butter for the glaze.
  • Once the poppers are done baking, remove them from the oven and brush with the honey butter glaze.
  • Let cool slightly before serving.

Notes

Serve warm or at room temperature. Store leftovers in an airtight container for up to three days at room temperature or freeze for up to three months.
