Peach Mixture

  • 4 cups fresh peaches, peeled and sliced For the best flavor, use ripe, in-season peaches.
  • 1 cup sugar Split into two portions for use in peach and batter.
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg

Batter

  • 1 cup all-purpose flour Can be substituted with gluten-free flour for a gluten-free option.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine sliced peaches, 1/2 cup of sugar, lemon juice, cinnamon, and nutmeg. Set aside.
  • In another bowl, mix flour, baking powder, salt, and the remaining 1/2 cup of sugar. Stir in milk, melted butter, and vanilla extract until combined.

Baking

  • Pour the batter into a greased baking dish.
  • Spoon the peach mixture over the batter.
  • Bake for 45-50 minutes or until golden brown and bubbly.
  • Let it cool slightly before serving.

Notes

Serve warm, with or without a scoop of vanilla ice cream. To store leftovers, keep in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. Thaw in the refrigerator before reheating.
