Smothered Chicken and Rice

Ingredients
  

Main Ingredients

  • 4 pieces bone-in chicken thighs or drumsticks For maximum flavor
  • 1 medium onion, chopped Use a sweet variety for best results
  • 2 cloves garlic, minced Add for extra flavor
  • 1 sprig fresh thyme Can use dried if necessary
  • 1 bay leaf bay leaf
  • 1 cup mushrooms, sliced Optional but delicious
  • 2 tablespoons butter For making gravy
  • 3 tablespoons flour To thicken the gravy
  • 2 cups chicken stock Warm, for smooth gravy
  • 1/2 cup heavy cream To enrich the sauce
  • 2 cups jasmine or long-grain rice, cooked separately Rice should be fluffy
  • to taste salt and pepper
  • 1 teaspoon paprika
  • pinch cayenne pepper Optional, for heat

Instructions
 

Preparation

  • Season chicken well with salt, pepper, and paprika. Sear in a hot skillet with a thin layer of oil until golden. Remove and set aside.
  • In the same pan, sauté onions and mushrooms with a pinch of salt until tender. Add garlic for the last minute.
  • Melt butter in the pan, sprinkle in flour, and stir for 1 minute. Slowly whisk in warm chicken stock to make a smooth gravy.

Cooking

  • Return chicken to the pan, add thyme and bay leaf, and cover. Simmer until chicken is tender and cooked through.
  • Stir in heavy cream and taste for seasoning. Serve over rice, and finish with chopped parsley and a squeeze of lemon.

Notes

For best results, cook rice separately. Store leftovers safely, cool within two hours, refrigerate, and reheat gently with a splash of broth. A squeeze of lemon at the end brightens the dish.
