  • 2 pounds small potatoes Choose small potatoes for the best texture.
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste Add according to personal preference.
  • Fresh herbs (such as rosemary or thyme), chopped Use any preferred fresh herbs.

Preparation

  • Preheat the oven to 450°F (230°C).
  • Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.
  • Place the potatoes on a baking sheet and gently smash each one with a fork or the bottom of a glass until flattened but still in one piece.
  • In a small bowl, mix the olive oil, minced garlic, salt, and pepper. Brush this mixture over the smashed potatoes.
  • Sprinkle fresh herbs on top.

Baking

  • Bake for 20-25 minutes or until the tops are crispy and golden.
  • Serve hot.

Notes

Smashed potatoes make a great side dish for roasted chicken, grilled steak, or fish. You can also serve them with a dollop of sour cream or a sprinkle of cheese on top for extra flavor. If you have leftovers, let them cool completely and store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through.
