Ingredients
  

Main ingredients

  • 1 pound Italian sausage Can use hot or mild based on preference.
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz) For thicker sauce, drain some liquid.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 tablespoon olive oil For browning the sausage.
  • as needed Rolls or crusty bread for serving

Instructions
 

Preparation

  • In a skillet, heat olive oil over medium heat and brown the sausage links.
  • Remove sausage from skillet, let cool, and slice into pieces.

Cooking

  • In the slow cooker, add the sliced sausage, bell peppers, onion, garlic, diced tomatoes, Italian seasoning, salt, and pepper.
  • Stir to combine all ingredients.
  • Cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender and flavors meld.

Serving

  • Serve hot on rolls for a hearty sandwich or alongside crusty bread.
  • Optional: Add a sprinkle of grated Parmesan cheese on top for extra flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove. Can freeze for up to 3 months; thaw overnight before reheating.
