Ingredients
  

For the chicken mixture

  • 4 pieces chicken breasts Use boneless and skinless for best results.
  • 1 cup chicken broth Low sodium recommended.
  • 2 units lemons (juiced and zested) Adjust based on taste preference.
  • 2 tablespoons olive oil Can substitute with other oils if desired.
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste pepper

For the rice

  • 2 cups rice White or brown rice can be used.
  • 4 cups water

Instructions
 

Preparation

  • In a slow cooker, mix the chicken broth, lemon juice, lemon zest, olive oil, oregano, thyme, garlic powder, salt, and pepper.
  • Add the chicken breasts to the slow cooker, ensuring they are coated with the mixture.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  • In a saucepan, bring 4 cups of water to a boil. Add the rice, cover, and reduce the heat to low. Cook for 15-20 minutes until the rice is tender.

Serving

  • Serve the lemon herb chicken hot over a bed of fluffy rice.
  • You can also add some steamed vegetables on the side for a complete meal.

Notes

Ensure the chicken breasts are evenly coated with the lemon and herb mixture for the best flavor. You can store leftovers in an airtight container in the refrigerator for up to 3-4 days.
