  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks Fresh pineapple recommended for best flavor.
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar Adjust according to sweetness preference.
  • 2 tsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tbsp cornstarch (optional) For thicker sauce.
  • 2 pieces green onions, sliced For garnish.

Preparation

  • Spray the slow cooker with nonstick spray.
  • In a bowl, combine soy sauce, brown sugar, ginger, and minced garlic.
  • Place chicken breasts in the slow cooker and pour pineapple chunks over them.
  • Spoon the sauce mixture evenly over the chicken and pineapple.

Cooking

  • Cook on low for 6–8 hours or high for 3–4 hours until cooked through.
  • For a thicker sauce, mix cornstarch with water and stir it into the slow cooker during the last 30 minutes.

Serving

  • Serve over rice or noodles and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days or freeze for 2-3 months. You can also add bell peppers or snap peas into the slow cooker for extra nutrition.
