Ingredients
  

For the Beef Tips

  • 2 pounds beef stew meat or chuck roast (cut into chunks) Choose chuck roast for tenderness.
  • 1 tablespoon olive oil For searing the beef.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika

For the Gravy

  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1.5 cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (optional for depth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch
  • 3 tablespoons water (to mix with cornstarch)

Preparation

  • Start by patting the beef dry. Season it with salt, pepper, garlic powder, onion powder, and paprika.
  • In a skillet, heat olive oil over medium-high heat. Sear the beef chunks on all sides for about 2–3 minutes until they are nicely browned. This step is optional but adds great flavor.
  • Once done, transfer the beef to the slow cooker.

Build the Sauce

  • Place the diced onion and minced garlic on top of the beef in the slow cooker.
  • Pour in the beef broth, Worcestershire sauce, and soy sauce (if using). Add the thyme and parsley, then stir gently to combine everything.

Slow Cook

  • Cover the slow cooker and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the beef is tender and easily pulls apart.

Thicken the Gravy

  • In a small bowl, mix cornstarch and water to create a slurry.
  • Pour this mixture into the slow cooker and stir well.
  • Cover again and cook for another 20–30 minutes until the gravy thickens.

Serve

  • Serve the beef tips and gravy over mashed potatoes, egg noodles, or rice. Don’t forget to spoon extra gravy on top!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3–4 days. To reheat, warm it in a saucepan over low heat or use the microwave until hot. For longer storage, freeze in freezer-safe containers for 2–3 months. Thaw overnight in the refrigerator before reheating.
