Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces Tender cut for stew
  • 4 pieces carrots, sliced Adds sweetness and color
  • 4 pieces potatoes, diced Hearty addition to stew
  • 1 piece onion, chopped Should be finely chopped
  • 3 cloves garlic, minced For added flavor
  • 4 cups beef broth Base for the stew
  • 2 tablespoons tomato paste Enhances flavor and color
  • 1 teaspoon dried thyme Herb for added flavor
  • 1 teaspoon salt Season to taste
  • 1/2 teaspoon black pepper Season to taste
  • 2 tablespoons Worcestershire sauce Adds depth of flavor

Instructions
 

Preparation

  • Add the beef, carrots, potatoes, onion, and garlic to the slow cooker.
  • In a separate bowl, mix together the beef broth, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
  • Pour the mixture over the ingredients in the slow cooker.

Cooking

  • Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.

Serving

  • Serve warm and enjoy! You can top it with fresh parsley and serve with crusty bread or over mashed potatoes.

Notes

If you have leftovers, let the stew cool completely. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Remember to let it thaw in the fridge before reheating. Cut beef into even pieces for even cooking. Other vegetables like peas or green beans can be added.
