  • 4 chicken breasts
  • 1 cup fresh cranberries Use fresh for the best flavor.
  • 1 orange, zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon honey Adjust sweetness to taste.
  • Fresh thyme, for garnish

  • Heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt and pepper and add them to the skillet. Cook until golden brown on both sides, about 5-7 minutes per side.
  • Add minced garlic and sauté for another minute.
  • Stir in fresh cranberries, orange juice, orange zest, and honey.
  • Bring the mixture to a simmer and cook until the cranberries burst and the chicken is cooked through, about 10-15 minutes.
  • Garnish with fresh thyme and serve with rice or mashed potatoes.

Notes

To store leftovers, let cool to room temperature, place in an airtight container, and refrigerate for 3-4 days. Can be reheated in the microwave or stovetop. Additional fruits like apples or peaches can be added for variation.
