Preparation

  • Toast the bread slices until golden brown.
  • In a small bowl, mix ricotta cheese with salt and pepper.

Cooking

  • In a non-stick skillet, heat a little olive oil over medium heat.

Notes

This dish is best enjoyed fresh, but the ricotta mixture can be stored in an airtight container in the fridge for up to 2 days. It's not recommended to store the toast with eggs, as the bread will become soggy. Reassemble by toasting fresh bread and adding the ricotta and eggs anew.
