Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Make sure the butter is softened to room temperature.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Main Ingredients

  • 1 cup fresh or frozen blueberries If using frozen blueberries, do not thaw them before adding.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Mixing

  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix just until combined, making sure not to overmix.
  • Gently fold in the blueberries.

Baking

  • Pour the batter into the prepared loaf pan.
  • Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

Simple Blueberry Bread can be served warm or at room temperature. It's delicious on its own, with butter or cream cheese, and pairs well with coffee or tea. To store, wrap tightly and keep at room temperature for up to three days, in the fridge for up to a week, or freeze for up to three months. Consider adding cinnamon or lemon zest for extra flavor.
