Main Ingredients

  • 8 small small tortillas
  • 6 large large eggs
  • 1 cup shredded cheese (cheddar or your choice) Use any cheese that melts well
  • 1 cup cooked sausage or bacon, crumbled Feel free to swap with your favorite protein
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, sauté the diced bell peppers and onions until softened.
  • In a bowl, whisk the eggs and season with salt and pepper.
  • Add the cooked sausage or bacon, sautéed vegetables, and half of the cheese to the eggs. Stir to combine.

Assembly and Cooking

  • In a baking dish, arrange the tortillas and fill each with the egg mixture.
  • Top with the remaining cheese.
  • Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the cheese is bubbly.

Serving

  • Serve hot with optional toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving. You can prepare the filling a day in advance and store it in the refrigerator. Feel free to make these vegetarian by omitting meat and adding more vegetables.
