Ingredients
  

For the mango salsa

  • 1 cup diced mango Choose ripe mango for sweetness
  • 1/2 medium red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 large lime, juiced Freshly squeezed for better flavor
  • Salt and pepper to taste

For the shrimp

  • 1 pound shrimp, peeled and deveined Can use frozen shrimp, thawed
  • Olive oil for cooking Use as needed for cooking
  • 2 ripe avocados, diced Choose ripe for creaminess

Instructions
 

Prepare the Mango Salsa

  • In a bowl, combine the diced mango, red onion, cilantro, and lime juice to make the mango salsa. Season with salt and pepper to taste.

Cook the Shrimp

  • Heat olive oil in a skillet over medium heat.
  • Add the shrimp and season with salt and pepper.
  • Cook until the shrimp are pink and opaque, about 2-3 minutes per side.

Assemble the Bowls

  • Place diced avocado in a bowl, top with shrimp and a generous scoop of mango salsa.
  • Serve immediately and enjoy!

Notes

Serve in individual bowls for a beautiful presentation. Garnish with extra cilantro or a lime wedge for added flavor. Store leftover salsa in an airtight container in the refrigerator and keep the shrimp and avocado separate if possible to prevent browning. Consume leftovers within a day for the best freshness.
