Ingredients
  

  • 12 slider rolls (such as Hawaiian sweet rolls)
  • 2 cups shredded cooked chicken
  • 1/2 cup BBQ sauce, plus more for drizzling
  • 1/2 small red onion, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon melted butter (or olive oil for a dairy-free option)

Instructions
 

  • Preheat oven to 375°F (190°C)
  • Place slider rolls, cut side up, on a baking sheet
  • Layer 1/2 cup shredded chicken in the bottom of each roll
  • Top with 2 tablespoons BBQ sauce
  • Sprinkle 2 tablespoons shredded cheddar cheese over the chicken
  • Top each slider with a few slices of red onion
  • Drizzle each with 1 tablespoon additional BBQ sauce
  • Brush the tops of the rolls with melted butter or olive oil
  • Bake for 17 minutes, or until the rolls are toasted and the cheese is melted
  • Serve warm and enjoy

Notes

For quicker prep, use pre-cooked and shredded chicken like rotisserie chicken
Pickled or green onions can be used as substitutes for red onion
BBQ sauce can be homemade or store-bought depending on preference
Cheese can be substituted with pepper jack or Monterey jack if desired
Leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated in the oven for best results
