Ingredients
  

For the Salad

  • 1.5 lbs carrots, peeled and julienned Use a mix of colorful carrots for a vibrant look.
  • 1/4 cup scallions, finely chopped
  • 2 tbsp fresh cilantro, chopped Can substitute with other fresh herbs.
  • 2 tbsp fresh basil, chopped Can substitute with other fresh herbs.

For the Dressing

  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp low sodium Tamari
  • 1 tbsp white miso
  • 1 tsp sriracha Adjust to taste.
  • 1 tbsp coconut sugar
  • 1 clove garlic, minced
  • 1 tsp ginger, minced

Instructions
 

Preparation

  • In a large bowl, combine the julienned carrots, scallions, cilantro, and basil.
  • In a small bowl, whisk together the sesame oil, rice vinegar, Tamari, miso, sriracha, coconut sugar, garlic, and ginger until smooth.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately or chill for 10-15 minutes to enhance flavors.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. The vegetables may become softer, so it's best enjoyed fresh.
