Ingredients
  

Main Ingredients

  • 2 cups cooked rice
  • 200 g mixed seafood (shrimp, squid, fish) Use thawed if frozen
  • 2 tablespoons vegetable oil For cooking
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce Adjust to taste
  • 1 tablespoon oyster sauce Adjust to taste
  • Salt and pepper, to taste

For Garnish and Serving

  • Spring onions For garnish
  • Cucumber and tomato slices For serving

Instructions
 

Cooking

  • Heat vegetable oil in a large pan over medium heat.
  • Add minced garlic and diced onion, and sauté until fragrant.
  • Add mixed seafood and cook until just done.
  • Push the seafood to the side of the pan and pour in the beaten eggs, scrambling until fully cooked.
  • Stir in the cooked rice, soy sauce, and oyster sauce, mixing everything thoroughly.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with spring onions and accompanied by cucumber and tomato slices.

Notes

Use day-old rice for the best texture. Feel free to add other vegetables like peas or carrots. Adjust seasoning to preference. Store leftovers in an airtight container in the fridge for up to three days.
