Preparation

  • Start by boiling the red potatoes until they are tender, around 15-20 minutes. Once cooked, drain and mash them lightly with a fork.
  • In a skillet, cook the ground beef over medium heat until browned, breaking it up into small pieces as it cooks.
  • Add the caramelized onions and Cajun seasoning to the beef and mix well. Cook for an additional few minutes.
  • In a bowl, combine the mayo, ketchup, and mustard. Stir until smooth.

Assembly

  • Layer the mashed potatoes at the bottom of a bowl. Add a scoop of the beef mixture on top.
  • Sprinkle shredded cheese over the beef and let it melt slightly.
  • Top with pickles and a handful of lettuce. Drizzle the mayo mixture over everything.

Notes

For creamier mashed potatoes, add a splash of milk or butter. Customize your protein by swapping ground beef for turkey or a plant-based alternative.
