Ingredients
  

For the Filling

  • 1 tablespoon Olive Oil Can substitute with avocado oil.
  • 3 cloves Garlic
  • 1 tablespoon Ginger Can use ground ginger (1 tsp) instead.
  • 1 medium Shallot Can substitute with onion.
  • 1 pound Ground Pork Can substitute with ground turkey or chicken.
  • 1 medium Carrot Can substitute with grated zucchini.
  • 1 tablespoon Fish Sauce Can use soy sauce or tamari.
  • 2 stalks Green Onions Chives can be a substitute.
  • 12 leaves Cabbage Leaves Napa cabbage is a delicate alternative.

For the Sauce

  • 2 tablespoons Tamari
  • 1 tablespoon Sugar-free Maple Syrup Can substitute with erythritol or stevia.
  • 1 teaspoon Toasted Sesame Oil
  • 1 tablespoon Lime Juice

Instructions
 

Preparation

  • Blanch the cabbage leaves in boiling water for a few minutes until softened. Remove and let cool.

Filling Preparation

  • In a pan over medium heat, add olive oil and sauté garlic, ginger, and shallot for a few minutes until fragrant.
  • Add ground pork (or your choice of meat) and cook until browned.
  • Mix in grated carrot, fish sauce, tamari, and chopped green onions. Stir until everything is well combined.

Sauce Preparation

  • In a small bowl, mix together tamari, sugar-free maple syrup, sesame oil, and lime juice.

Assembly

  • Take a cabbage leaf and place a scoop of the meat mixture in the center. Roll tightly, tucking in the sides. Repeat with remaining leaves and filling.

Cooking

  • Place rolls seam-side down in a baking dish. Pour the sauce over them and bake at 350°F (175°C) for about 25-30 minutes or until heated through.

Notes

These rolls can be served hot directly from the oven. Drizzle with extra sesame oil or a sprinkle of chopped cilantro for added flavor. They pair well with a side of steamed vegetables or a refreshing salad. To store leftovers, place the rolls in an airtight container in the refrigerator. They will last for up to three days. For longer storage, you can freeze them; just make sure to wrap each roll well before placing them in a freezer-safe container.
