Ingredients
  

For the Marinade

  • 1 pound Beef Sirloin (Thinly sliced against the grain)
  • 1/4 cup Soy Sauce (Low-sodium works great)
  • 1 tablespoon Sesame Oil (Substitute with olive oil if desired)
  • 2 cloves Minced Garlic (Fresh is preferred)
  • 1 tablespoon Sugar (Brown sugar recommended)

For the Filling

  • 1 medium Onion (Yellow or red variety)
  • 1 cup Bell Peppers (Any color can be used)
  • 1 cup Kimchi (Swap with sauerkraut for milder taste)
  • 4 rolls Toasted Sub Rolls or Hoagie Bread (Whole grain or gluten-free if needed)
  • 8 slices Cheese (Provolone/American) (Consider cheddar or pepper jack for a bolder flavor)

Instructions
 

Preparation

  • In a bowl, mix soy sauce, sesame oil, minced garlic, and sugar. Add the thinly sliced beef, and stir well to coat. Let it marinate for at least 30 minutes.

Cooking

  • In a large skillet over medium heat, add a little oil. Sauté the sliced onions and bell peppers until they are soft, about 5-7 minutes. Remove them from the skillet and set aside.
  • In the same skillet, add the marinated beef. Cook it for 5-7 minutes or until it is browned and cooked through.
  • Add the sautéed onions, bell peppers, and kimchi to the skillet. Stir everything together and cook for an additional 2-3 minutes.
  • Place the cheese slices on top of the mixture. Cover the skillet for a minute until the cheese melts.

Assembly

  • Open the toasted rolls and fill them with the beef and kimchi mixture.

Notes

Serve hot with a side of fries or a fresh salad. Pairs nicely with pickles or extra kimchi on the side for a little extra spice. For maximum tenderness, slice beef as thinly as possible.
