  • 1 10-ounce bag tortilla scoops Use gluten-free tortilla scoops for a gluten-free version.
  • 1 8-ounce block softened cream cheese Substitute with plant-based cheese for vegan option.
  • 8 ounces shredded mozzarella cheese Use plant-based cheese for vegan.
  • 1 large egg Replace with flaxseed mix for vegan option.
  • 1 15-ounce can sweet corn, drained
  • 1 4-ounce can mild or medium green chiles For spicier bites, use spicy green chiles or add jalapeños.
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese for topping

Instructions
 

Preparation

  • Preheat the oven to 425 degrees Fahrenheit.
  • Lightly grease or line two baking sheets with parchment paper.
  • Arrange the tortilla scoops cup-side up on the baking sheets, packed tightly.
  • In a large bowl, combine the softened cream cheese, mozzarella cheese, egg, sweet corn, green chiles, garlic powder, salt, and black pepper until smooth and well blended.
  • Scoop about one tablespoon of filling into each tortilla scoop without overfilling.
  • Sprinkle grated parmesan cheese on top of each filled scoop.

Baking

  • Bake for 13 to 15 minutes until the cheese is bubbly and the tops turn golden brown.
  • Allow to cool for a few minutes; serve warm.

Notes

These bites are best served warm. They go well with dipping sauces like salsa or sour cream. For storage, let them cool completely and store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
