Mushroom Preparation

  • 4 large large portobello or cremini mushrooms Choose fresh mushrooms for the best results.
  • 2 tablespoons olive oil (or melted butter) Use olive oil for a healthier option.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.

Filling Ingredients

  • 2 ripe avocados Make sure they are ripe for the best flavor.
  • 4 large eggs Use farm-fresh eggs if possible.
  • 1 teaspoon garlic powder (or fresh garlic) Fresh garlic can be used for more flavor.
  • 1 teaspoon onion powder (optional) This is optional but can add flavor.
  • 1 cup shredded cheese (cheddar, mozzarella, or feta) Choose your favorite cheese.
  • 2 tablespoons fresh herbs (like chives or parsley) For garnish and added flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Clean the mushrooms and remove the stems. Place them on a baking sheet.

Seasoning

  • Drizzle the mushrooms with olive oil and sprinkle with salt and pepper.

Filling

  • In a bowl, mash the avocados and mix in garlic powder, onion powder (if using), and cheese.
  • Spoon the avocado mixture into each mushroom cap.

Baking

  • Crack an egg into each stuffed mushroom on top of the avocado filling.
  • Put the mushrooms in the oven and bake for about 20-25 minutes, or until the eggs are cooked to your liking.

Garnishing

  • Remove from oven and sprinkle with fresh herbs for added flavor.

Notes

Serve warm right out of the oven. They are delicious on their own but can be paired with a side salad or whole-grain toast. For an extra touch, consider adding a drizzle of hot sauce or a sprinkle of additional cheese on top. Store leftovers in an airtight container in the refrigerator for 2-3 days. To reheat, warm in the oven or microwave.
