  • 2 cups rotisserie chicken, shredded
  • 1 cup mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • optional fresh parsley for garnish

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
  • Add the garlic and sliced mushrooms, cooking for another 2-3 minutes until the mushrooms soften.

Cooking

  • Pour in the chicken broth and bring to a boil.
  • Stir in the shredded rotisserie chicken and thyme. Reduce the heat and let it simmer for 15-20 minutes.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh parsley if desired.

Notes

Let the soup cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3-4 days. For longer storage, freeze the soup for up to 2-3 months. For a richer flavor, consider adding a splash of white wine before adding the chicken broth. You can add other vegetables like spinach or kale for more nutrition.
