  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup vegetable oil
  • 1 unit Juice of 1 lime

For the chicken

  • 1 whole chicken (about 3-4 pounds)

Preparation

  • In a bowl, combine garlic, cumin, paprika, oregano, black pepper, salt, soy sauce, vinegar, vegetable oil, and lime juice to create a marinade.
  • Rub the marinade all over the chicken, ensuring to get it under the skin.
  • Cover and marinate in the refrigerator for at least 4 hours or overnight.

Cooking

  • Preheat your oven to 450°F (232°C).
  • Place the marinated chicken on a roasting pan and roast for about 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 10-15 minutes before carving and serving.

Notes

For more flavor, let the chicken marinate overnight. Use a meat thermometer to check for doneness to ensure that the chicken is juicy and safe to eat. Allow the chicken to rest after cooking to keep it moist.
