Ingredients
  

Flatbread Base

  • 1 store-bought or homemade flatbread (about 10 inches)

Roasted Tomato Mixture

  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning

Cheese Toppings

  • 2 oz goat cheese, crumbled
  • 1/4 cup shredded mozzarella cheese
  • 1 tsp balsamic glaze (plus more for serving)

Garnish

  • Fresh basil leaves, for garnish
  • 1 pinch red pepper flakes (optional) For added heat

Instructions
 

Preparation

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Toss cherry tomatoes with olive oil, salt, pepper, and oregano. Spread on the sheet and roast for 15–20 minutes until softened and slightly caramelized.

Assemble Flatbread

  • Place the flatbread on a separate baking sheet or pizza stone.
  • Sprinkle with mozzarella cheese and scatter roasted tomatoes evenly on top.
  • Crumble goat cheese over the flatbread and drizzle lightly with balsamic glaze.

Baking

  • Bake for 8–10 minutes, until the cheese is melted and the edges are golden.

Serving

  • Remove from the oven, top with fresh basil and a sprinkle of red pepper flakes if desired.
  • Slice and serve warm with an extra drizzle of balsamic glaze.

Notes

Best served warm. Can be cut into slices as a starter or enjoyed as a main dish. Leftovers can be stored in the refrigerator for up to 3 days.
