Ingredients
  

Sweet Potato Rounds

  • 2 large Sweet Potatoes Look for firm, smooth sweet potatoes.

Seasoning

  • 2 tablespoons Olive Oil Extra virgin recommended.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika Omit if preferred.

Toppings

  • 1 cup Feta Cheese Goat cheese can be substituted.
  • 2 tablespoons Honey Maple syrup can be used.
  • 2 tablespoons Parsley Freshly chopped.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel the sweet potatoes and slice them into rounds about 1/2 inch thick.
  • In a mixing bowl, combine the olive oil, salt, black pepper, and smoked paprika. Add the sweet potato rounds and toss until well coated.

Roasting

  • Place the seasoned sweet potato rounds in a single layer on a baking sheet and bake for about 25-30 minutes, flipping halfway through until tender and lightly browned.

Finishing

  • Once done roasting, sprinkle the feta cheese on top while still warm and drizzle honey over the sweet potato rounds.
  • Garnish with chopped parsley for a fresh touch.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven or microwave, but add honey and feta fresh for best flavor. Adjust seasoning to taste, and consider adding nuts for crunch or swapping feta for goat cheese.
