Preparation

  • Preheat the oven to 400°F (200°C).
  • Place the sweet potato rounds on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

Cooking

  • Roast in the oven for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized.
  • Remove the baking sheet from the oven and top each sweet potato round with crumbled goat cheese, dried cranberries, and candied walnuts.
  • Return to the oven for an additional 5 minutes, or until the goat cheese is melted.
