Ingredients
  

For the strawberries

  • 2 cups fresh strawberries, hulled and sliced Use ripe strawberries for the best flavor.
  • 2 tablespoons honey Drizzle extra honey on top if desired.

For the whipped ricotta

  • 1 cup ricotta cheese Dairy-free ricotta can be used for a dairy-free option.
  • 1 tablespoon vanilla extract
  • 1 pinch salt

For the toast

  • 4 slices bread (your choice, such as sourdough or whole grain) To make gluten-free, use gluten-free bread.
  • 1 tablespoon olive oil
  • Optional fresh mint leaves for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix sliced strawberries with honey. Spread them out on a baking sheet.

Roasting strawberries

  • Roast the strawberries in the oven for about 15 minutes, until they are soft and juicy.

Whipping ricotta

  • While the strawberries are roasting, combine ricotta cheese, vanilla extract, and a pinch of salt in a bowl. Use a whisk or fork to mix until smooth and creamy.

Toasting bread

  • Toast the slices of bread until they are golden and crispy.

Assembling the toast

  • Once the strawberries are done roasting, take them out of the oven and let them cool for a few minutes.
  • Spread a generous amount of whipped ricotta on each slice of toast.
  • Top with the roasted strawberries.
  • Drizzle with extra honey if desired and garnish with fresh mint leaves.

Notes

Experiment with different breads and try adding a splash of lemon juice to the strawberries for extra zing. You can also use other fruits like peaches or blueberries.
