  • 2 tablespoons whole grain mustard Adjust according to taste preference
  • 2 tablespoons olive oil
  • 1 teaspoon salt To taste
  • 1 teaspoon pepper To taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the baby potatoes with olive oil, Dijon mustard, whole grain mustard, salt, and pepper until well coated.
  • Spread them out in a single layer on a baking sheet.

Cooking

  • Roast in the oven for 25-30 minutes, or until crispy and golden, stirring halfway through.

Serving

  • Serve warm as a side dish.

Notes

Try to cut the baby potatoes into similar sizes for even cooking. For extra crispiness, you can broil the potatoes for the last few minutes of cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
