  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
  • Roast for about 25-30 minutes until they are tender.

Cooking

  • In a large pot, sauté the onion and garlic until they are soft.
  • Add the roasted sweet potatoes, vegetable broth, and Italian herbs to the pot.
  • Bring to a boil and then let it simmer for 15 minutes.
  • Use an immersion blender to puree the soup until it is smooth.
  • Adjust the seasoning if needed and serve hot, garnished with optional toppings.

Notes

This soup can be served as a starter or a hearty main dish. You can add croutons, fresh herbs, or a splash of cream on top for extra flavor.
