  • 1 cup Ricotta cheese
  • 3 tbsp Honey Adjust amount based on sweetness preference.
  • 1 tsp Chili flakes Adjust for desired heat level.
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper

Preparation

  • Preheat the oven to 425°F (220°C).
  • Peel and trim the carrots, then toss them with olive oil, salt, and pepper.

Cooking

  • Spread the carrots on a baking sheet in a single layer and roast in the oven for about 25-30 minutes, or until they are tender and charred.
  • Meanwhile, whip the ricotta cheese until smooth.
  • In a small saucepan, heat the honey and stir in chili flakes, allowing it to warm for a minute or two.

Serving

  • Once the carrots are done, plate them over a layer of whipped ricotta, and drizzle with the spicy honey.
  • Serve warm and enjoy!

Notes

Store leftovers in separate airtight containers; roasted carrots last up to 3 days, ricotta is best within 2 days. Reheat the carrots in the oven before serving.
