Ingredients
  

For the Roasted Carrots

  • 2 lbs Carrots Use fresh, firm carrots
  • 2 tbsp Olive oil
  • 1 tsp Salt

For the Topping

  • 1 cup Whipped ricotta cheese Can substitute with regular ricotta, whipped until creamy
  • 2 tbsp Hot honey Adjust to taste
  • 1 tbsp Fresh herbs (like parsley or thyme) For garnish

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Toss the carrots with olive oil and salt, then spread them out on a baking sheet.

Roasting

  • Roast in the oven for about 25-30 minutes, until the carrots are tender and caramelized.

Assembly

  • While the carrots are roasting, whip the ricotta until creamy.
  • Once the carrots are done, arrange them on a serving plate, dollop with whipped ricotta, and drizzle with hot honey.
  • Garnish with fresh herbs before serving.

Notes

Serve these roasted carrots warm. They can be a side dish or light main dish. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven for the best texture. Keep the whipped ricotta and hot honey separate until serving.
