Salad Ingredients

  • 2 large cucumbers, diced
  • 2 ripe avocados, diced Choose ripe avocados that give slightly when pressed.
  • 1 cup cherry tomatoes, halved
  • 1/4 large red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped Can be replaced with parsley or basil.

Dressing Ingredients

  • 2 tablespoons lime juice To prevent avocado from browning, add more lime juice if desired.
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the diced cucumbers, avocados, cherry tomatoes, red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Drizzle the dressing over the salad and gently toss to combine.
  • Serve immediately or refrigerate for up to 30 minutes before serving.

Notes

Serve chilled or at room temperature. Pairs well with grilled chicken or fish, and can be enjoyed on its own. If storing leftovers, keep the dressing separate to avoid mushiness.
