Ingredients
  

For the Peanut Butter Mixture

  • 1 cup smooth peanut butter Make sure the peanut butter is smooth for the best texture.
  • 3 tablespoons butter (softened)
  • 1.5 cups powdered sugar
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt

For the Chocolate Coating

  • 2 cups chocolate chips Use any type of chocolate: milk, dark, or white chocolate.
  • 2 tsp canola oil This helps to smooth the chocolate for dipping.

Preparation

  • In a stand mixer, combine peanut butter, butter, powdered sugar, vanilla extract, and salt. Mix with a paddle attachment.
  • Scoop out 24 evenly sized balls of the mixture using a tablespoon. Place them on a parchment-lined baking sheet.
  • Shape each ball into an egg shape and place it back on the baking sheet. Freeze until hard, about 30-60 minutes.

Coating

  • Melt the chocolate chips and canola oil in a microwave-safe bowl in 30-second intervals, stirring in between.
  • Dunk each egg into the melted chocolate using a fork, ensuring it's fully coated. Remove excess chocolate by gently tapping the fork.
  • Place the chocolate-covered eggs back on the baking sheet. Drizzle any leftover melted chocolate over the eggs if desired.
  • Return the eggs to the freezer to solidify the chocolate for about 5 minutes.

Notes

Store in an airtight container. They will last in the refrigerator for up to two weeks or in the freezer for a few months. Use parchment paper to separate layers and prevent sticking. Customize by adding crushed graham crackers or chopped nuts for added texture.
