  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 medium lemon, juiced
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 tablespoon Olive oil

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  • Stir in garlic and cumin, cooking until fragrant.
  • Add lentils and vegetable broth; bring to a boil.
  • Reduce heat and simmer for about 20 minutes, until lentils are tender.
  • Use an immersion blender to blend the soup until creamy.
  • Stir in lemon juice and season with salt and pepper to taste.
  • Serve warm.

Notes

For added flavor, garnish with fresh herbs like parsley or cilantro. Pair with crusty bread or a fresh salad for a complete meal. Store leftovers in an airtight container.
