  • 1 cup raspberries Fresh or thawed if frozen
  • 1-2 pieces jalapeños, diced Adjust based on spice preference
  • 2 tablespoons honey For sweetness
  • 2 tablespoons olive oil For cooking and flavor
  • to taste none Salt and pepper For seasoning
  • 1 tablespoon lime juice Freshly squeezed for flavor
  • to garnish none Fresh cilantro For presentation

Preparation

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper.
  • In a bowl, combine raspberries, diced jalapeños, honey, olive oil, and lime juice to make a sauce.

Cooking

  • Place the chicken in a baking dish and pour the sauce over it.
  • Bake for 25-30 minutes or until the chicken is cooked through.
  • Garnish with fresh cilantro before serving.

Notes

For a thicker sauce, blend the sauce ingredients before pouring over the chicken. Can be marinated for added flavor. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
