  • ¼ tsp
  • Canned pumpkin puree
  • 1 cup
  • Vegetable oil
  • ½ cup (substitute: light olive or melted coconut oil)
  • Large eggs
  • 2
  • Granulated sugar
  • 1 cup
  • Honey
  • 2 tbsp (for glaze)
  • Butter, cold (for streusel)
  • 4 tbsp (substitute: vegan butter if preference)
  • Brown sugar
  • ¼ cup
  • Cinnamon
  • 1 tsp
  • Try these substitutions: Gluten-free flour blend + 1 tsp xanthan gum for 1:1 flour replacement
  • Notes: No pork, alcohol, or lard used

Instructions
 

  • Preheat oven to 350°F (175°C) and grease an 9x5-inch loaf pan
  • In a bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves
  • Mix pumpkin, oil, eggs, and sugar until smooth
  • Pour wet into dry ingredients and fold gently until just combined
  • Transfer batter to prepared loaf pan and smooth top
  • For streusel: Toss butter, brown sugar, and cinnamon until crumbly; spread evenly atop batter
  • Bake 50-60 minutes until toothpick inserted at center comes out clean
  • Cool completely before slicing
  • Drizzle honey over cooled loaf before serving

Notes

Let cooled bread rest in pan 10 minutes before removing to preserve delicate crumb
Streusel can be substituted with a crumbly oat topping for texture variation
Glaze can be omitted for a less sweet version
Store in airtight container up to 3 days or freeze slices for up to 3 months
