Main Ingredients

  • 2 cups cooked chicken, shredded Use rotisserie chicken for quicker prep.
  • 2 cups cooked rice Quinoa can be used as a healthier option.
  • 1 can black beans, drained and rinsed Can add extra beans or vegetables for a vegetarian version.
  • 1 cup corn
  • 1 cup salsa Use spicy salsa for a spicier kick.
  • 1 cup shredded cheese Experiment with different types of cheese if desired.

Spices

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

For Serving

  • Tortilla chips Optional for serving.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cooked rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
  • Spread the mixture evenly in a greased 9x13 inch baking dish.
  • Sprinkle shredded cheese on top.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Serving

  • Serve warm with tortilla chips if desired. Top with fresh ingredients like diced tomatoes, avocado, or sour cream for added flavor.

Notes

If you have leftovers, store in an airtight container in the refrigerator for 3-4 days. Reheat in oven or microwave until heated through. For freezing, wrap tightly and store for up to 3 months. Thaw in the refrigerator overnight before baking.
