Ingredients
  

For the Meatballs

  • 1 lb ground pork Use fresh ground pork for best flavor.
  • 1 small onion, finely chopped For added sweetness, use a yellow onion.
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs Can use gluten-free breadcrumbs if needed.
  • 1 large egg Bind the meat mixture.
  • to taste Salt and pepper Adjust based on preference.
  • 1 tsp dried oregano Adds herbal flavor.
  • 1 tsp paprika For color and slight sweetness.

For the Sweet Potatoes

  • 2 large sweet potatoes, peeled and cubed Can substitute with regular potatoes if desired.
  • 2 tbsp olive oil For tossing sweet potatoes.

For Garnish

  • to taste Fresh parsley Adds freshness and color.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground pork, chopped onion, minced garlic, breadcrumbs, egg, salt, pepper, oregano, and paprika. Mix until well combined.
  • Form the mixture into meatballs, about 1 inch in diameter.

Cooking

  • On a baking sheet, toss the cubed sweet potatoes with olive oil, salt, and pepper.
  • Arrange the meatballs on the same baking sheet with the sweet potatoes.
  • Bake in the preheated oven for about 25-30 minutes, or until the meatballs are cooked through and sweet potatoes are tender.

Serving

  • Garnish with fresh parsley before serving.
  • Serve the pork meatballs with sweet potatoes hot from the oven.

Notes

To store leftovers, let them cool, then place in an airtight container and refrigerate for 3-4 days, or freeze for up to 3 months. Use fresh herbs for added flavor and consider adding red pepper flakes for heat. Avoid overmixing the meat mixture for tender meatballs.
