  • 2 cups refried beans
  • 0.5 pound chorizo sausage, cooked and crumbled
  • 1 cup cheese (e.g., Chihuahua, Monterey Jack, or cheddar), shredded
  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Cooking

  • In a skillet over medium heat, cook the chorizo until it is browned and cooked through.
  • In a large bowl, combine the refried beans with the cooked chorizo.
  • Stir in the cheese, cumin, garlic powder, onion powder, salt, and pepper.
  • Mix well until all ingredients are combined.
  • Transfer the mixture to a baking dish and bake at 350°F (175°C) for about 15-20 minutes, or until heated through and the cheese is melted.
  • Garnish with chopped cilantro if desired and serve warm.

Notes

Feel free to add more spices to boost the flavor. For a creamier texture, mix in some sour cream. For a vegetarian version, skip the chorizo and add sautéed vegetables. Experiment with different types of cheese.
