Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1/2 cup uncooked rice
  • 1 can (15 oz) tomato sauce
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup water

Instructions

Preparation

  • In a large bowl, combine ground beef, uncooked rice, chopped onion, garlic powder, salt, pepper, and Worcestershire sauce. Mix until well combined.
  • Form the mixture into meatballs, about 1 inch in diameter.

Cooking

  • In a large skillet, pour in the tomato sauce and water. Heat over medium heat.
  • Add the meatballs to the skillet, cover, and simmer for about 30-35 minutes, until the meatballs are cooked through and the rice is tender.

Serving

  • Serve Porcupine Meatballs hot on a plate. They taste great on their own, but you can also pair them with mashed potatoes, steamed vegetables, or a fresh salad. A sprinkle of grated cheese on top can add an extra touch of flavor.

Notes

Make sure not to overmix the meat mixture. This keeps the meatballs tender. If you want extra flavor, add some chopped herbs like parsley or oregano. Consider using ground turkey or chicken as a healthier alternative to beef. You can adjust the seasonings to your taste. Store any leftover Porcupine Meatballs in an airtight container in the refrigerator for about 3-4 days or freeze for longer storage.
