Ingredients
  

For the whipped feta

  • 8 oz block of feta cheese, crumbled
  • 4 oz cream cheese, softened Ensure it is at room temperature for smooth blending.
  • 2 tablespoons extra-virgin olive oil Optional: extra for drizzle.
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey Adjust sweetness to taste.

For the toppings

  • 1/4 cup pomegranate arils
  • 1/4 cup shelled unsalted pistachios, roughly chopped Chop finely for better flavor distribution.
  • 2 tablespoons fresh mint leaves, finely chopped

Seasoning and serving

  • Salt and freshly ground black pepper, to taste Feta can be salty, so season sparingly.
  • Pita bread or crackers for serving Great for scooping.

Preparation

  • In a food processor, combine the crumbled feta, softened cream cheese, olive oil, lemon juice, and honey.
  • Process the mixture until it is smooth and creamy. Pause to scrape down the sides of the bowl as necessary.
  • Taste the mixture, and season with salt and freshly ground black pepper as needed.

Serving

  • Transfer the whipped feta to a serving dish and smooth the top with the back of a spoon.
  • Sprinkle the whipped feta with pomegranate arils, chopped pistachios, and fresh mint leaves.
  • Drizzle a bit of extra olive oil over the top if desired.
  • Serve immediately with pita bread or crackers.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 to 4 days. Allow to warm up slightly at room temperature before serving.
