  • 2 cups cauliflower rice Fresh or frozen cauliflower rice can be used.
  • 1 cup shredded mozzarella cheese Reserve half for topping.
  • 1 cup marinara sauce Choose a low-sugar variety for a healthier option.
  • 1 teaspoon Italian seasoning Adjust to taste.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat.
  • Drain excess fat, then add the marinara sauce, Italian seasoning, salt, and pepper.
  • Stir in the cauliflower rice and half of the mozzarella cheese.
  • Spread the mixture in a baking dish.
  • Top with the remaining mozzarella cheese and pepperoni slices.

Baking

  • Bake for 25-30 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

Serve straight from the oven and consider adding fresh basil or parsley on top for added flavor. It pairs well with a side salad. For storage, cover leftovers tightly and refrigerate for up to 4 days, or freeze for longer storage.
