  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon baking powder

  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup crushed pineapple (drained) Make sure to drain well
  • 1/2 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  • In a mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the crushed pineapple and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, shredded coconut, and salt.
  • Gradually add the dry mixture to the wet mixture, mixing until just combined.

Baking

  • Pour the batter into the prepared cake pan.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving

  • Slice the cake into generous pieces and serve it on a nice platter.
  • Optional: Pair with vanilla ice cream, a dusting of powdered sugar, or a drizzle of coconut cream.

Notes

Ensure to drain the crushed pineapple well to avoid excess moisture. For added flavor, mix in chopped walnuts or macadamia nuts. Check for doneness a few minutes before baking time is up to prevent overbaking.
