Preparation

  • Dice the pineapple into bite-sized pieces and place them in a mixing bowl.
  • Chop the walnuts and toast them in a dry skillet over medium heat until fragrant, about 3-5 minutes.
  • In a small bowl, juice the limes and whisk in honey until fully combined.
  • Add the toasted walnuts to the bowl with the pineapple.
  • Pour lime-honey dressing over the salad and sprinkle with salt.
  • Toss the salad gently until all ingredients are well coated.
  • Serve immediately on a bed of arugula or in a wrap.

Notes

For best results, choose ripe pineapple and toast walnuts to enhance their taste. Adjust honey based on your sweetness preference, and consider adding other nuts for extra crunch. Store leftovers in an airtight container in the refrigerator; best consumed within a day or two.
