Ingredients
  

Bread and Spreads

  • 2 slices sourdough or whole grain bread Use good quality bread for better texture
  • 1 tablespoon unsalted butter Spread generously on one side of each slice

Cheeses and Pesto

  • 1/2 cup shredded mozzarella cheese Can experiment with different types of cheese
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoons fresh basil pesto Homemade or store-bought

Instructions
 

Preparation

  • Gather all ingredients and tools: skillet and spatula.
  • Spread butter generously on one side of each slice of bread.
  • On the unbuttered side of one slice, layer mozzarella cheese, followed by pesto, then cheddar cheese, and top with the other slice of bread.

Cooking

  • Place the sandwich butter-side down in a skillet over medium heat. Cook until golden brown (about 3-4 minutes).
  • Carefully flip using the spatula and press lightly; cook until both sides are golden and cheese is melted (another 3-4 minutes).
  • Remove from heat, let cool for a minute, slice in half, and serve warm.

Notes

Pesto Grilled Cheese is best enjoyed hot. Pairs well with tomato soup or a simple salad. Feel free to add extra toppings like sliced tomatoes or spinach for added freshness. For leftovers, store in an airtight container in the refrigerator and consume within 1-2 days. Reheat in a skillet over low heat.
