  • 2 cups rice
  • 1 lb chicken thighs or breasts
  • 1 cup green sauce made with cilantro, garlic, lime juice, olive oil, and jalapeño
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Olive oil for cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté until soft.
  • Add the chicken and cook until browned on both sides.
  • Pour in the rice and stir to coat it with oil and flavors.
  • Add chicken broth, season with salt and pepper, and bring to a boil.
  • Reduce the heat to low, cover, and simmer until the rice is cooked and has absorbed the liquid, about 20 minutes.
  • While the rice is cooking, prepare the green sauce by blending cilantro, garlic, lime juice, olive oil, and jalapeño.
  • Once the rice is ready, serve with the green sauce drizzled over the chicken.

Notes

Best served warm. Pair with a side salad or steamed vegetables. For additional flavor, consider marinating the chicken in lime juice and spices before cooking.
